Description

From Menfi, in the Province of Agrigento (Sicily) it is named Laguna Secca after some of the soils in the territory, once covered by shallow lagoons that today are fertile and productive. A 13% alcohol, 100% Chardonnay grape wine. The Chardonnay Laguna Secca had cryomaceration (a winemaking technique in which the crushed grapes are held at sub zero temperatures in order to weaken the cellular structures in grape skins via ice crystals) and the must was fermented for 15-20 days in stainless steel tanks, much like the Bertolino Soprano Bianco. Aged for four months in stainless steel tanks. Recognizable for its typical Mediterranean notes of prickly pear and orange peel it has a pale straw color with a light fruit nose. It finishes medium long and smooth with a marked minerality and persistence. Usually harvested in 2nd week of August, the vineyards are stretched along south and south-east facing hills on medium-textured limestone soils at altitudes between 150-350 meters above sea level. Great with seafood, in particular sea shells, clams, mussels, oysters and prawns. To be served chilled, as advised by the wine maker.
